It's osmosis. Your skin absorbs water because there's more water outside than inside the cells. It equalizes. (Too much water, and the cells undergo lysis - bursting.)
Since sea water has a much heavier salt content than saline (which flows in and out of cells easily), the cells won't try to equalize the environments by drawing in more water. They actually absorb the salt. This is why you're always thirsty after going to the beach -- and why the Dead Sea is called the Dead Sea.
